ESSENTIAL SPICES & INGREDIENTS

                           
For general cooking and baking you need to have these on hand:

Salt,  kosher salt,  black pepper, breadcrumbs, baking powder, baking soda, cinnamon, cream of tartar, soy sauce, vanilla extract, Worchestershire sauce, ground mustard,vegetable oil, garlic salt, garlic powder, flour, sugar, brown sugar, cornstarch, beef and chicken broth,vinegar,parmesian cheese.


Wondering what the "other" spices are used for?

Basil leaves: pizza, herbed breads, rolls and croutons.
Cayenne Pepper: Intense, spicy flavor for wings and chili.
Celery Salt: Made of salt and celery seed. Gives a crisp fresh taste to sauces for macaroni dishes. Add to sliced tomatoes, vegetable dishes and stews.
Chili Powder: Spicy, Tangy. Use in mexican dishes, chili, cornbread, beans and chicken wings.
Cloves: use whole for studding hams.
Cumin: Enhances flavor of vegetables, meats, sauces, couscous, curry and bean dishes.
Extra Virgin Olive Oil:  for lighter taste in salad dressings, baking, cooking and sauteing
Ginger: cakes, cookies, gingerbread, fruit, salad dressing, posk, beef and chicken.
Italian Seasoning: Mixture of several spices for meats.
Minced onion, onion flakes, onion powder:  Salads, meats and fish, poultry and vegetables. Flakes plump up for a fresher taste by adding 1 Tbsp. to cold water and soak for 10 minutes.
Nutmeg: breads, spice cake, cookies, stewed fruit, puuding and vegetables.
Oregano:  Meats, veggies and casseroles
Paprika:  Deviled eggs, use in a rub for ribs, spicy flavor goes a long way
Parsley:  For garnish and mild flavor. A little goes a long way. Sprinkle on eggs, potatoes, squash and fish
                     



MEASUREMENTS

It's very important to measure correctly. Use measuring spoons, not spoons you eat your soup with. They aren't the same. Use a measuring cup for liquids. A coffee cup won't work (Neither will measuring cups intended for dry goods). Hope the following lists will help!
(tsp means teaspoon, Tb means tablespoon)
3 tsp = 1 Tb
4Tb= 1/4 cup
5 1/3Tb= 1/3 cup
8Tb= 1/2 cup
1 cup= 8 fluid ounces= 1/2 pint
2 cups= 1 pint
4 cups= 1 quart
4 qts.= 1 gallon

2Tb butter= 1 ounce
1 stick butter- 1/2 cup
1 square chocolate= 1 ounce

28 saltine crackers= 1 cup fine crumbs
14 graham crackers= 1 cup fine crumbs
1 1/2 slices bread= 1 cup soft crumbs

4 oz. uncooked macaroni (1- 1 1/4c)= 2 1/2 cups cooked
4 oz. uncooked noodles (1 1/2-2c)= 2 cups cooked
7 oz. uncooked spaghetti= 4 cups cooked
1 c.  uncooked instant rice= 2 cups cooked

Juice of 1 lemon=3 Tbs.
Juice of 1 orange= 1/3 cup



SUBSTITUTE INGREDIENTS

Sometimes you don't have an ingredient that a recipe calls for.  Don't panic. Use this substitution chart.

*1 c cake flour= 1 c minus 2 Tb all purpose flour
*1 Tb cornstarch= 2 Tb flour
*1 c whole milk= 1 c nonfat dry milk and 2 1/2 tsp butter
*1 c sour milk or buttermilk= 1 Tb lemon juice or vinegar in 1 cup whole milk
*1 square unsweetened chocolate (1 ounce)=  3 Tb powdered
     cocoa  and 1 Tb butter
*1 small onion= 1 Tb instant minced onion
*1 clove garlic= 1/8 tsp garlic powder
*1 c tomato juice= 1/2 c tomato sauce plus 1/2 c water
*1 c catsup= 1 c tomato sauce, 1/2 c sugar and 2 Tb vinegar
*1 c barbeque sauce= 1 c ketchup, 1/4 tsp mustard, salt, pepper, 
     2 tsp, brown sugar (Mix til very smooth)



COOKING FOR A CROWD

Would you just love to have a big party but don't know how much to buy?
Follow the guidelines below and adjust according to how many of your guests are children (who won't eat as much as Uncle Blake) or infants, who won't eat from the table. Have fun with it and remember, if you misjudge you will have leftovers for awhile or you can always have somebody run to the store for more. It's a party! Don't fret about it!
Desserts
Cake for 24= 15 x 10 sheet cake or 2 9" layer cakes.
Ice Cream for 24= Two 1/2 gallons
Pie for 30= Five 9" pies, cut into 6 pieces each

Meats To Serve 25 People
Beef Roast= 12 1/ lbs.
Ground Beef (for hamburgers)= 6 3/4 -7 lbs
Ham=10 lbs
Chicken= 6 chickens
Turkey= 15 lbs.
Turkey Roll= 6-7 lbs

Pasta and Rice
Long Grain Rice= 1 1/2lbs. uncooked
Spaghetti/Noodles= 2 1/2 lbs uncooked

Relishes
Carrot strips= 1 lb
Celery= 1 lb
Olives= 1 quart
Pickles= 1 quart
Lettuce for salad= 4 heads
Potato salad= 3 quarts
Fruit salad= 2 quarts
Soup= 1 1/2 gallons
Mashed Potatoes= 6 lbs raw
Baked Potatoes= 8 lb raw
Potato Chips= 1 1/2 lbs.
